My next recipe using pumpkin/squash is what I used to call (at my restaurant in Italy, in my previous life):
Purple Sweet Potato, Kabocha & Onion Millefeuille with Taleggio & Honey.
I know, long “fancy” name, but it’s descriptive, so that is what is important in menus.
Anyway: other than the fact that prepping vegetables is always a bit of work, this recipe is easier than it sounds.
I used to serve it in single portions just like you see in the images, but you can prep it in baking dish, then spoon it out, making it perfect for a festive meal, like Thanksgiving.

On this chilly autumn day, I have a yearning to hop on back to Honolulu and enjoy afternoon tea and balmy breezes at the stunning Veranda room within the Kahala Resort.
This used to be a regular thing for me, sometimes with friends, sometimes even alone, and the Veranda offers one of the two best afternoon teas in Honolulu.

As I continue my series of recipes with pumpkin/squash, here is some classic Italian comfort food with a pumpkin twist:
Gnocchi alla Romana with Kabocha and Sage.
This dish is easy and inexpensive to make. Can be made ahead. Can be frozen. Perfect for a change for Thanksgiving. The kids will love it!

Life Lessons while Gathering Chestnuts
We all know to wear sturdy shoes, carry a basket, a stick and even a nice set of long tongs to make things easier.
But in two weeks of gathering chestnuts every day, I have also learned to walk the path twice.
The first time I collect all the chestnuts I see.
When I am satisfied that there are no more left on the ground, I turn around and walk back along the same path.
Each time, so many more chestnuts are revealed that had not been visible before: the light hits them differently, or they were hidden by a leaf.
So many more chestnuts with just a slight shift in my point of view.
Even chestnuts can teach me something.
